Naked Cake

Ingredient: (Digital Scale measure) 

 

  • 1 preparation for sponge cake 4 eggs
  • 65gr of water
  • 25cl of liquid cream 35% fat
  • 250g of mascarpone
  • 50g of icing sugar
  • natural vanilla flavor
  • 300g of fresh or frozen raspberries
  • flowers for the decoration (or any other cute lollipops and fresh fruits)

The procedure of making a Naked cake

  1. Preheat oven to 180 ° C.
  2. Pour the sponge cake mixture into a beater bowl
  3. Break the eggs and add the water.
  4. Turn the mixer on at low speed for one minute and then on high speed for 5 minutes. The preparation doubles in volume and turns white.
  5. Lubricate the molds with a mold release spray. Divide the dough into the 3 molds and bake for 25 minutes of cooking (to be monitored).
  6. Unmold the genoa on a flap and let them cool completely before leveling and cutting them in half to garnish them.

Prepare the cream,

  1. Pour the liquid cream, the mascarpone into the mixer bowl, begin to whip the cream and increase the speed little by little.
  2. Add the icing sugar and a few drops of aroma.
  3. Stop the mixer when the cream is mounted and place it in a pocket fitted with an 18mm socket.
  4. Garnish each cake with cream and raspberries.
  5. Stack the 3 cakes and decorate with the flowers in unflavored (or any other cute lollipops and fresh fruits).
