When using hobs
It's best to use a casserole which size is adapted to the diameter of your heat source. It will make your casserole more efficient, and will avoid to damage the sides and the handles. With gas hob, make sure the flame heats below the base only - NEVER let the flames reach the sides.
When using Oven
If you cover with the lid, don't go over 200 degrees Celsius because of the phenolic Knob, unless you unscrew and take out the knob first.
Preserving the enamel
CHASSEUR sets a double layer of enamel, with black on the edges to protect from corrosion. Indeed the enamel prevent the cast-iron to oxidize, a natural consequence of iron in contact with humidity even though not dangerous for health. And it helps as well to cook with natural non-stick properties. However strong and solid, take scrupulous care of the enamel layers to keep those properties : don't use sharp tools or knives which with time will damage the enamel. Prefer using wooden tools. Don't scratch strongly when washing as well. Please mind not use cold water to wash the warm hot pan, it can avoid the enamel to crack on the long term.
