1902 Vichy is the collection of Traditional French Kitchen knives, sharp and precise, but light and easy to use without wrist pain. Their colorful and beautiful handle is a true "Vichy" fabric covered by acrylic.
Forged in one piece, the blade goes all the way up to the end of the handle. Made of extreme high quality steel, rich in carbon, they are extremely hard (Rockwell hardness between 54 and 56 HRC), and professional razor sharp. The eyelet hole at the end of the handle makes it easy to hang if you wish.
1902 Vichy small Carving knife 15 cm is used to cut all pieces of meat such as roasts, hams, poultry or legs. This carving knife (or "tranche-lard") is provided with a thin and slightly curved blade for an ideal cut. Thanks to this blade it will be easy to make long cuts in a single pass. This knife is reputed to cut without tearing but with even thickness.
