1902 Vichy is the collection of Traditional French Kitchen knives, sharp and precise, but light and easy to use without wrist pain. Their colorful and beautiful handle is made of true "Vichy" fabric covered by firmly riveted acrylic (dishwasher safe). 1902 is a nod to the date C. Dozorme cutlery was created in France, in Thiers city, the Europe capital of cutlery.
Full tang means the blade goes all the way up to the end of the handle in one piece for a much better balance and resistance than knives made of 2 pieces. Made of extreme high quality steel, rich in carbon, they are extremely hard (Rockwell hardness between 54 and 56 HRC), and professional razor sharp. The eyelet hole at the end of the handle makes it easy to hang if you wish.
Model: 1902 Vichy Carving knife 15 cm is used to cut all pieces of meat such as roasts, hams, poultry or legs. This carving knife (or "tranche-lard") is provided with a thin and slightly curved blade for an ideal cut. Thanks to this blade it will be easy to make long cuts in a single pass. This knife is reputed to cut without tearing but with even thickness.
