1902 Vichy is the collection of Traditional French Kitchen knives, sharp and precise, but light and easy to use without wrist pain. Their colorful and beautiful handle is made of true "Vichy" fabric covered by firmly riveted acrylic (dishwasher safe). 1902 is a nod to the date C. Dozorme cutlery was created in France, in Thiers city, the Europe capital of cutlery.
Full tang means the blade goes all the way up to the end of the handle in one piece for a much better balance and resistance than knives made of 2 pieces. Made of extreme high quality steel, rich in carbon, they are extremely hard (Rockwell hardness between 54 and 56 HRC), and professional razor sharp. The eyelet hole at the end of the handle makes it easy to hang if you wish.
Model: 1902 Vichy Cleaver is a beautiful forged Wolf cleaver, a tribute to Claude Dozorme founder who was nicknamed "the wolf", and the wolf being now the logo of Claude Dozorme. This Cleaver has an especially tough edge meant to withstand repeated blows directly into thick meat and dense cartilage and even bone, not to mention the cutting board or other supporting surface below. It remains still easier to manipulate thanks to its relative light weight.
Brand: Claude Dozorme
We Like: extremely precise, sharp, easy to resharpen, and easy to use thanks to its relative light weight. Convenient, the whole Vichy collection can be hanged in the kitchen thanks to their eyelet hole.
We Recommend: dishwasher safe.
