The creation of Thomas Bastide and Claude Dozorme
THE FAMOUS DESIGNER MEETS THE MASTER CUTLER
FlatCut collection is based on its knives unique asymmetric design created by Thomas Bastide, famous French designer creating for the prestigious workshops of Hermes, Baccarat, Christofle among others. Crafted by the re-known Master cutler Claude Dozorme, of Thiers, France, FlatCut knives combine modernity and tradition: they are extremely resistant "full tang" knives. It means their blade go all the way up to the end of the handle in one piece. They are made of extreme high quality steel, rich in carbon and are extremely hard (Rockwell hardness between 54 and 56 HRC), with professional razor sharp blade.
T. Bastide explains: "the originality of this new kitchen knife lies in its asymmetrical shape and the inclination of its handle. The blade is highlighted. The object becomes simple and pure. The handle, with a thicker side, makes its grip overly comfortable ". We've tested it for you: that's surprisingly true!
Model : FlatCut Carving knife is used to cut all pieces of meat such as roasts, hams, poultry or legs. This carving knife (or "tranche-lard") is provided with a thin and slightly curved blade for an ideal cut. Thanks to this blade it will be easy to make long cuts in a single pass. This knife is reputed to cut without tearing but with even thickness.

We Like: the comfort of this surprising asymmetric handle. Excellent cutting performance an easy to resharpen. In addition, the inclination of the handle has been designed to avoid the edge of the blade touching your kitchen worktop to protect it's sharpness.
