Haute Cuisine is the collection of typical French Model of Kitchen knives, redesigned by Master Cutlery Claude Dozorme.
Forged in one piece, the blade goes all the way up to the end of the handle. The knives of this collection have an excellent balance between the blade and the handle, for a maximum efficiency and comfort. Made of extreme high quality steel, rich in carbon, they are extremely hard (Rockwell hardness between 54 and 56 HRC), and professional razor sharp, but safe thanks to their hilt, a true finger protection. The handle of Haute Cuisine knives has been assembled and polished by hand.
This is an ultra efficient cleaver. Haute Cuisine Cleaver has an especially tough edge meant to withstand repeated blows directly into thick meat and dense cartilage and even bone, not to mention the cutting board or other supporting surface below.
